Mini Pumpkin cupcake

160g Pumpkin paste
160g cake flour
80g butter
4 eggs
100g sugar
30g corn flour
1tsp baking powder
40ml skimmed milk
A pitch of salt

Method:

1. Beat the butter and sugar.

2. Add the eggs

3. Shifted cake flour, corn flour, BP & salt into the mixture.

4.Add pumpkin paste and milk into the mixture

5. Scoop the mixture into the paper cup (3/4 full).

6. Bake for 25-30 mins @ 180°C
